Taco's are just the best, they work in any dinner occasion, and everyone loves them. However, they can be challenging for vegetarian people, since they very often contain meat as their main ingredient. Therefore I put together this amazing veggie version of one of my favourite type of taco, which is equally as tasty, if not better. BBQ pulled pork taco's, vegetarian style.
BBQ Pulled Jackfruit Taco's
Ingredients ~ 4-6 servings
2 cans of jackfruit
olive oil
1 onion
2 cloves of garlic
160ml BBQ sauce
2 tsp cumin powder
1 tsp paprika powder
1 tsp dried oregano
salt and pepper
small tortilla wraps
2 avocado's
1 can of corn
¼ red cabbage
500ml sour cream
2-3 limes
cilantro for topping
Method
Drain the canned jackfruit, put in a bowl and start shredding it with 2 forks.
Heat up some olive oil in a big frying pan. Chop up the onion finely and add to the pan. Mince the garlic and add as well. Then add the shredded jackfruit, the BBQ sauce and the spices. Stir everything well and leave it to fry for 5 minutes.
Meanwhile, slice the avocado's and limes, chop up the red cabbage and cilantro and open up the sour cream and corn. Together with the tortilla's, all of these items can be put on the table for self serving.
Lastly put the pan of pulled jackfruit on the table as well, and let everyone assemble their own taco on their plate.
Wine pairing
Every BBQ related dish goes great with Malbec. Since this dish doesn't contain meat but in fact a fruit, try to go for a lighter and less tannic Malbec with a medium body.
