Gooey Banana Bread

Got some old bananas laying around? NEVER throw them away, there are so many things you can do with them, for example baking this amazing banana bread. (OR freeze them for some delicious nice cream; check out my banana nice cream recipe for this!) This banana bread is the easiest baking to do, and also the easiest snack to bring anywhere. If you have a long day at work, or a big commute every day, there's nothing better than a home made slice of gooey banana bread to avoid getting hungry.



Gooey Banana Bread


Ingredients


  • 3 medium sized, ripe bananas (175g)

  • 200g plain flour

  • ½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp cinnamon

  • ½ tsp sea salt

  • 85g butter, room temperature

  • 100g white sugar

  • 50g brown sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 180 ml almond milk

  • 50g walnuts, chopped

  • 70g chocolate chips


Method


  1. Preheat the oven to 180°C and butter a 23x13 cm rectangular baking pan.

  2. Mash the bananas in a small bowl with a potato masher or with a fork. Set aside.

  3. In a medium bowl, combine the flour, baking powder, baking soda, cinnamon and sea salt all together with a whisk. Set aside

  4. In a large bowl, mix the butter with a handmixer or a stand mixer on high speed until creamy. Turn the mixing speed to medium and add both sugars, the egg and the vanilla extract. Then add the mashed bananas.

  5. Turn the mixing speed to low and add the bowl of dry ingredients and the almond milk. Don't overmix.

  6. Lastly, fold in the chopped walnuts and the chocolate chips.

  7. Bake for 50 minutes to 1 hour depending on your oven. The banana bread is ready when a toothpick comes out (almost) dry.
