If you are a brownie lover, this is for you! This cookie is not just any chocolate cookie, the inside is so gooey and fugdy like a brownie, and the outside is nice and crunchy, as you can tell by the cracks on the top. An intense chocolate sensation in the form of a simple cookie.
Gooey Chocolate Fudge Cookies
Ingredients
90g all purpose flour
20g cocoa powder
1 tsp baking powder
pinch of salt
225g dark chocolate
60g butter
2 eggs
100g white sugar
90g light brown sugar
1 tsp vanilla extract
100g chocolate chips
Sea salt flakes for topping
Method
Preheat the oven at 180°C and line 2 baking trays with parchment paper.
In a medium bowl, add the flour, cocoa powder, baking powder and salt.
Slowly melt the chocolate and butter together in a bowl over a sauce pan with boiling water. Keep stirring until completely smooth. Then set aside to cool off.
In a big bowl stir the eggs with a hand mixer at medium speed together with both sugars and the vanilla extract, for 5 minutes. Reduce to low speed and slowly add the melted chocolate mixture. Then add the flour mixture as well and stir only until incorporated, not more. Lastly, fold in the chocolate chips with a spatula. SIDE NOTE: The dough will be quite thick and not runny at all. Therefore, these cookies do NOT require any fridge time before baking!
Scoop some dough up with an ice cream scoop and place about 8 balls onto a tray. Bake for 13 minutes. Take out of the oven and sprinkle with flakey salt.
Wine pairing
The rich chocolate flavour of this cookie will pair very well with Malmsey Madeira. This type of Madeira has chocolatey notes itself and thus the two will enhance each other perfectly to make the ultimate gooey chocolate fit.
