Gooey Nutella Swirl Cookies

Cookies and Nutella make a delectable combination that's sure to satisfy your sweet tooth. One delicious way to enjoy them is to make Nutella swirl cookies - even more gooey than your classic chocolate chip cookies. When you bite into these cookies, you'll experience the perfect marriage of warm, freshly baked cookie and the creamy, hazelnut-chocolate goodness of Nutella. It's a delightful treat that's sure to leave you craving for more!



Gooey Nutella Swirl Cookies


Ingredients


  • 115g unsalted butter, room temperature

  • 100g white sugar

  • 150g light brown sugar

  • 1 full egg

  • 1 egg yolk

  • a few drops of vanilla essence

  • 150g Nutella

  • 280g all purpose flour

  • 1 tsp baking soda

  • 1 tsp cornstarch

  • ½ sea salt

  • 100g chocolate chips

  • flakey salt for garnish


Method


  1. Preheat the oven to 180°C.

  2. In a large bowl, beat the butter at medium speed until creamy. This can be done both with a hand mixer or a stand mixer.

  3. Add both sugars, the egg, egg yolk and vanilla essence. When all is combined, add half of the Nutella (75g).

  4. Change your mixer to low speed and add the flour, baking soda, corn starch and salt. Mix until combined but don't overmix.

  5. Fold in the chocolate chips with a spatula. Lastly, add the rest of the Nutella (75g) and fold your dough just very few times, until you end up with swirls of Nutella through your dough. DON'T OVERMIX, or your dough will become too crumbly.

  6. Scoop your dough into balls with an ice cream scoop or cookie dough scoop. Scoop the wanted amount onto a baking tray lined with baking paper. Bake for 10 or 11 minutes depending on the size of your cookies. The rest of the dough can be scooped and stored in a container in the fridge for up to a week. In this way you can enjoy freshly baked cookies every day :)
