Gooey Salted Caramel Brownies

Salted caramel lover? But also a chocolate lover? Welcome to the best recipe ever! These brownies are already so gooey inside on their own, so when combined with another gooey deliciousness in the form in salted caramel, they are to die for, and should probably be illegal. On top of that they are really easy to prepare, anyone can do it. Amaze people with these delicious little flavour bombs.



Gooey Salted Caramel Brownies


Ingredients


  • 170g butter (melted)

  • 200g white sugar

  • 100g brown sugar

  • 3 large eggs

  • ½ tsp vanilla extract

  • 190g plain flour

  • 30g cocoa powder

  • 1 tsp sea salt

  • 70g chocolate chips

  • 300g soft caramel candy


For the topping:


Method


  1. Preheat the oven to 180°C and line a square baking pan with parchment paper.

  2. In a large bowl, combine the butter, both sugars, the eggs and the vanilla extract. Mix well with a whisk.

  3. Add the flour, cocoa powder and salt through a strainer. Don't overmix.

  4. Fold in the chocolate chips with a spatula.

  5. Add half of the batter to the square baking pan. Place the soft caramel candies in a layer on top of the batter. Then cover with the other half of the batter.

  6. Bake for 35 minutes or until the the center is cooked. Then remove from the oven and let it cool down.

  7. For the topping, melt the soft caramel candy together with the heavy cream in the microwave (1 minute is sufficient). Mix until uniform and poor over the cooled down brownie. Let it sit for 10 minutes, then sprinkle with flakey sea salt.

  8. Cut up in slices and ENJOY!




Wine pairing


This sweet, salty, chocolatey cake will be best with a very rich, sweet dessert wine like Pedro Ximénes port. This wine has very robust flavours of molasses and toffee, which will be a great match for this little chocolate sugar bomb.
