This is a super easy, half warm salad, with lots of flavour from the different ingredients that all go so well together. It's a dish that everyone always loves, and that can be served at any time in the day. The nectarines and tomatoes give it lots of freshness, whereas the chickpeas and halloumi make sure to fill up your stomach nicely. Well-balanced and intriguing, but oh so easy to prepare, this salad impresses everyone.
Nectarine Halloumi and Chickpea Salad
Ingredients ~ 4 servings
1 can chickpeas
4 tbsp olive oil
1 tsp paprika powder
1 tsp garlic powder
2 tsp dry thyme
250g cherry tomatoes, halved
4 nectarines, sliced
250g halloumi, sliced
basil leaves
salt & pepper
Method
Drain and rinse the chickpeas. Place them in a bowl and add the oil, paprika, garlic and thyme. Mix together until all the chickpeas are all coated, then fry in a pan for 10 minutes until crunchy.
In a grill pan or on the actual grill, add the nectarines and the halloumi and grill both until lightly browned.
Toss the chickpeas, nectarines, halloumi and cherry tomatoes together and divide equally over bowls. Garnish with basil leaves, salt and pepper.
Wine pairing
The nectarines make this salad sweet, the halloumi will balance with its saltiness. That means that this dish needs a sweet wine with some decent body. Therefore a glass of Viognier would be a great pairing. If you are really craving a red, you could go with a Beaujolais, since it fruity and has very low tannins for a red. Beaujolais pairs very well with sweet and savoury flavours.
