Rainbow Rice Bowl with Gooey Peanut Sauce

Rice, veggies and a delicious gooey peanut sauce to top it all. These healthy and tasty rainbow rice bowls will leave you satisfied for hours, are super tasty and so easy to make! Also very nice to serve at a dinner party, since everyone can assemble their own bowl however they like. Add any other veggies or toppings as preferred, everything goes! And rest assured, EVERYONE will ask for the recipe of the gooey peanut sauce ;-)



Rainbow Rice Bowl with Gooey Peanut Sauce


Ingredients ~ 4 bowls


  • 1 cup rice

  • 375g tofu (pressed)

  • 2 tbsp soy sauce

  • 2 tbsp olive oil

  • 1 tbsp sriracha sauce

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tbsp corn starch

  • 2 avocados

  • ½ cucumber

  • 4 carrots (grated)

  • ¼ small red cabbage

  • 1 cup corn

  • 1 cup cashew nuts

  • nutritional yeast flakes

  • sesame seeds

For the sauce:

  • ½ cup coconut milk

  • 5 tbsp natural peanut butter

  • 2 tbsp soy sauce

  • 1 tbsp maple syrup

  • 1 tbsp sweet chili sauce

  • 1 tsp rice wine vinegar

  • 1 clove of garlic (crushed)


Method


  1. Start off with cooking the rice. Bowl 1 cup of rice in 2 cups of water. Let it cool down.

  2. Meanwhile, prepare the tofu by cutting it up in 2 cm cubes, adding it to a bowl together with the soy sauce, olive oil, sriracha, pepper, garlic powder and corn starch. Stir everything up until every cube of tofu is covered in the mixture. Fry for 10-15 minutes in a frying pan with olive oil until crispy. Transfer to a bowl and set aside.

  3. Chop up the avocado and the cucumber in cubes and put on a plate. Slice the red cabbage into thin strips and put in a bowl. Also put the graded carrots and corn in bowls and put everything on the table.

  4. Add the cashews, sesame seeds and nutritional yeast flakes to the table as well.

  5. For the gooey peanut sauce, mix all the ingredients together in another bowl and also add to all the bowls on the table. Now everything is ready and everyone can start assembling their own bowls, starting with rice on the bottom, veggies and tofu on top, and the sauce and toppings to top it all off. ENJOY!

These rice bowls pair very nicely with a crisp and dry Riesling, ideally from the Mosel region in Germany.
