Watermelon Gorgonzola Salad

I put this salad together for the first time on vacation in Italy. It was just a spur of the moment, putting all fresh ingredients at hand together and it turned out perfect for the hot summer day it was. This salad is so easy and fast to make, it provides the ultimate refreshment for the heat, and puts very basic but great flavours together. Pretty much the translation of summertime in Italy on a plate.



Watermelon Gorgonzola Salad


Ingredients ~ 4 servings


  • ½ small watermelon

  • 1 red onion

  • 100g gorgonzola (or any other blue cheese)

  • fresh basil leaves

  • salt and pepper

  • balsamic vinegar cream (optional)


Method


  1. Cut the watermelon in cubes, slice the onion finely. Mix together in a big bowl. Crumble the blue cheese on top of it. Then add some fresh basil leaves, salt and pepper.

  2. Toss everything together in the big bowl and then divide over separate plates.

  3. Optionally you can drizzle some balsamic vinegar cream on top.


The basil can be substituted for fresh mint if preferred. The mint will give extra freshness to the salad.

Wine pairing


Sparkling wine, preferably Champagne. The yeasty flavour will complement the cheese perfectly, and the bubbels with pair nicely with the watermelon.
