Zucchini Chickpea Veggie Burgers

Veggie burgers can be tricky, often they are dry and fall apart, and even their taste can often be disappointing. NO MORE with these amazing zucchini chickpea patties. They are so moist and tasty, even just on their own. But of course even better with other toppings and sweet potato fries on the side. Enjoy!



Zucchini Chickpea Veggie Burgers


Ingredients ~ 4 burgers


  • 1 can of chickpeas

  • ½ of a small zucchini

  • ¼ of a red onion

  • 50g quick oats

  • 1 tbsp peanut butter

  • 1 tbsp sriracha

  • 2 tbsp rice wine vinegar

  • 1 tbsp olive oil

  • 1 tsp cumin

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • salt and pepper

  • 2 avocado's

  • 2 tomatoes

  • 100g arugula

  • 4 slices of cheddar cheese

  • 4 burger buns

  • 4 tbsp mayonnaise

  • 1 tbsp sriracha

  • 1 large or 2 medium sweet potato's


Method


  1. Start by peeling and cutting the sweet potato into 2 cm cubes. Heat some olive oil in a frying pan and add the sweet potato cubes. Fry for about 10 minutes on medium heat. Stir occasionally.

  2. Meanwhile, slice the avocado's and the tomatoes. Combine the mayonnaise and sriracha in a small bowl and mix well. This sriracha mayo can be used on the burger and next to the sweet potato fries.

  3. Drain and rinse the chickpeas, place them in a large bowl and mash them with a potato masher. Grade the zucchini on top of the mashed chickpeas. Cut the onion very fine and combine with the chickpeas and zucchini.

  4. Then add the oats, peanut butter, sriracha, vinegar, olive oil, cumin, garlic powder, onion powder, pepper and salt to the bowl. Mix very well and use your hands to form 4 patties. Fry them in olive oil in a frying pan for about 5 minutes on each side, on medium heat.

  5. Slice open the burger buns and toast them until lightly browned.

  6. Assemble the burger: start with the bottom bun, sriracha mayo on top, then arugula, the veggie patty, a slice of cheese, a slice of tomato, a few slices of avocado and lastly the top bun. Serve with the sweet potato fries and sriracha mayo.

Wine pairing


This veggie burger is so soft and almost creamy inside, and for that reason it pairs very well with a buttery, oaked Chardonnay.
